Lol I’m down to eating 4 eggs with black coffee and bacon . Plus my night meals are the cheapest hamburger I buy in 10 lb rolls seasoned with smoked sea salt . from that Wally’s world place . On Tuesday I buy some pastrami at my local small grocery and two ribeyes from them because of the 10% senior discount. I buy two gallons of distilled water I keep near me in my bedroom . Just how my spartan carnivore diet has evolved lately. Glad you cut out the process foods . I had to cut out mayo, because every one has processed oil . Yes, I think this discussion about food is very important. It’s bound to be disruptive since the accepted medical wisdom says eat mostly carbs and much less fat and protein.
In this country, virtually all food is poison or poisoned. Even organic food is unsafe with what is falling from the sky. In Kern County, organic fruits are being watered with oil fracking waste water. We have the worst food in the world. Except on rare occasions, I avoid eating any grains because even organic grains have glyphosate. We need a safe place to grow healthy food . I've been thinking that maybe we need to put a glass covering over crops to protect them from the skies. But then they've also poisoned the ground water and what's coming out of the faucet, and plastic bottles have the plastic problems. It's remarkable we're still alive. The poisoning of our food can't be by accident.
I'm a pretty lazy cook but I make a pot of beans or lentils every week which are the basis for quick, healthy meals. I eat a variety of vegetables, mostly raw, and lots of fruit. Casseroles are a good way to put alot of good ingredients in one dish and usually provide leftovers too. Once in awhile we have pasta, but always whole grain. White pasta, bread, rice etc. are pretty much devoid of nutrients and taste horrible to me...I don't have cravings for sweets anymore--one small square of super dark chocolate is all I desire!
Like you said, it's not that hard and doesn't have to be expensive, although buying organic is worth it to me.
It appalls me that most people put poison into their bodies, but it's designed to be addictive and many succumb to it...
That's all we can do! Food is one thing we can control, to a large extent, if we resist the marketing schemes and the urge for the immediate satisfaction of junk food.

This will sound like an excuse but my biggest problem is often time/tiredness. Both my wife and I work long hours and all too often dinner just becomes another chore. It becomes easy to then eat the "wrong" things.
I don't eat bread, pasta, anything with sugar, junk food, fast food; any ultra-processed food like cold cereal, (check out Bob's Red Mill Organic oats---I don't eat them, but they are lightly processed); I do eat organic rice about once a month--also lightly processed; nothing with chemical ingredients, dyes, etc; no artificial sweeteners like aspartame; nothing with high-fructose con syrup. Really, anything that has a paragraph of ingredients that I can't pronounce, or know what they are. The video I posted is very good! The tough thing is, even though ultra processed foods (UPF) are horrible for our metabolism, they are very highly palatable and addictive, so our bodies will crave them. When I decided to do this last May 15th, it was hard, at first, to give up pastas and breads. The sugar was easier, even though I was addicted to it. So pastas and breads do the same thing to your insulin levels as sugar does.

I lost 70lb pre Covid. Since put it back plus extra, which always is the pattern after losing. I did it just to prove I had the will power to say "no". But keeping the Feast Beast in my head caged is hard. That weird talking to myself, when contemplating eating something I know I shouldn't and losing the internal battle is just plain weird. WTF is in that shit that enables that to happen?
It might be easier to ask "what processed foods don't I eat?". Do you use anything as a sweetener? Honey?

I don't replace bread and if I make a marinara or other tomato=based sauce, I will sometimes use cauliflower in place of the pasta. Bread and pasta are not essential macro-micro nutrients. Also, sweetener is not an essential nutrient. There are some acceptable ones like allulose or monkfruit, but what would you put that in? If you're off of sugary-carbs, then no sweetener is needed.. I do eat berries and 1/2 a banana per day and those taste like CANDY to me now. Oh yeah, and dark chocolate is acceptable--but, I may eat one bar in a month. Sparkling water with lemon? So many good options for nutritious eating. I also do intermittent fasting to give my tummy time to digest and restore. I usually eat between 9-3 or 10-4.
You don't have to do cold turkey like I did, but pick one metabolically unhealthy food to eliminate per week? Unless you are on death's door, this approach seems doable.

The only food that is not processed is fruit and nuts. Raw eggs? Even many vegetables, like potatoes and hard squashes, are not digestible if they are not processed, ie., cooked. Where are you supposed to draw the line? All oils are processed (try eating a raw olive sometime.) All sugars are processed. Distilled water is.....distilled, not natural. Ears of wheat are as much food as cotton bolls and sheep are clothing. Processing food is literally and historically what made us human. Depending upon what experts you believe this week, some foods in some of their myriad edible forms may have less or more drawbacks than others. Greedy unscrupulous folks are making money off your gullibility and your ignorance. Big Business is not your friend, organic or not. Good luck using the internet to figure out who really cares about your health and the health of the planet, and who just has an axe to grind and a product to sell.
I'm not trying to be willfully obtuse. I'm genuinely curious about the fine line where processing becomes ultra-processing. Billions of people for thousands of years have avoided minimally processed whole grains, especially rice but also wheat. High-fat foods, like chocolate and foie gras , have been revered forever, even in hunter-gatherer societies. Hydrogenating oils is a clear example of the triumph of technology and profit over morality and nutrition but it probably seemed like a good idea when first introduced. We are all in our different ways individually and collectively fighting losing battles against mortality. I applaud any and everyone's temporary successes against the forces of darkness, especially yours, Cindy. But moral clarity without the humility of accepting the limits of our understanding may blind us to the paths towards a better world for all.

Bread is my weakness too. Ezekiel bread is made with no flour and no junk. I think it's ok. It has a lot of whole grains.
